French Varietals Down Under - “Gout du Terroir”
Winemaker: - Neil Prentice Holly’s Garden & Moondarra VIC
Neil will discuss the flavours that "terroir" brings to food and wine and how, as a farmer/vintner/vigneron, he will "listen" to the fruit and use what he learns from the particular qualities of the fruit, which are consistent across vintages, to the wine. Thus "terroir" dictates the flavour and style of the wine. He will present two “Paddocks” or “Terroirs” of Moondarra Pinot Noir; "Samba Side" and "Conception" alongside Salami produced from Wagyu cattle from the same farm and discuss the impact of soil, aspect and climate upon these flavours.
Neil will present Holly's Garden Pinot Gris and discuss how "terroir" allows him to produce an extreme and unique style of wine, which could only be made from his site.

“Create the 2006 Heathcote Estate Shiraz with Tod Dexter”
Winemaker: - Tod Dexter Group Winemaker, Heathcote Estate, Yabbylake Vineyards and Cooralook
Tod Dexter will lead a tasting that looks at the influence of various levels of Grenache on the 2006 Heathcote Estate Shiraz. The aim of the exercise will be to determine the correct level of Grenache to blend with the Shiraz – how much is too much? The wine in the bottle is after the culmination of 30 or more different barrels. Tod will lead a tasting to identify the components that need to be included to produce a well structured balance yet complex wine with great length and mid palate richness. Tod will identify the characteristics that are critical for a wine to have the ability to age and develop in the bottle. You will have the opportunity to create your own ideal blend and perhaps influence the final outcome of the blend.
